Roasted Cauliflower

The best cauliflower you’ve ever tasted (unless maybe it was fried…)

1 head or 12 oz. bag of pre-cut cauliflower
2 tbsp. EVOO
2 tbsp. balsamic vinegar
salt & pepper to taste
1/2 cup freshly grated parmesan (optional)

Preheat oven to 450. Drizzle olive oil over cauliflower, sprinkle generously with salt & pepper and toss to coat well. Transfer to a pan or baking dish and bake for 15-20 minutes.

Remove from oven, place cauliflower in bowl. Drizzle the balsamic over, add another touch of salt & pepper, and toss again to ensure even coverage. ***If you’re not making this vegetarian, this is where you’d also add the grated parm and toss well!

Place back in baking dish and bake another 10-15 minutes (shorter if you want it slightly “al dente” or longer for a softer veggie).

This works great as a side dish or thrown on a bed of wilted spinach or mixed greens.
