Pumpkin Chocolate Chip Cookies

This is another recipe I get requests for every time I make it! I’m going to experiment with butter substitutes to try to make them vegan next time and will update the note with my findings – enjoy!

1 cup chocolate chips
1 cup butter
1 cup sugar
1 large egg
½ teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla essence
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 cup canned pumpkin

Beat shortening in mixer until fluffy. Add sugar and beat well. Add egg and pumpkin, mix well. Add flour, baking soda, baking powder, salt and cinnamon – mix well. Stir in vanilla and chocolate chips. Drop by tablespoons onto lightly greased cookie sheets. Bake at 350 for 13 mins.

You can also add nuts (walnuts or pecans) if you want.
These cookies will be the consistency of brownies or muffins and may look not ready when you take them out after 13 mins. They’re supposed to be moist, don’t panic, they keep baking a while longer even after you take them out.
