Love Lasagna (Spinach & Artichoke)

I offered to make my honey anything he wanted for Valentine’s Day and being the “I love everything you make” kind of guy, we settled on a lasagna. I’ve been on this huge vegetarian kick and depending on your definition, this may not qualify since it does have eggs and a lot of cheese in it, but, no flesh whatsoever so I thought it would be a nice compromise for my non-vegetarian Valentine.

8 oz. package whole wheat lasagna noodles, cooked & set aside
12 oz. package frozen chopped spinach, thawed
12 oz. can artichoke hearts or frozen artichokes, chopped.
3 eggs
3 cups ricotta cheese
1/2 cup grated parmesan
3-4 cups pre-made or store-bought pasta sauce
3 cups shredded mozzarella
salt & pepper to taste

Almost there… one more layer of pasta, then sauce, then mozzarella!
And the finished product! YUMM-O!!!

Spray a 9×13″ pan with non-stick spray, then line bottom with one row of cooked lasagna noodles. Add 1/3 of the spinach, salt & pepper, then another layer of noodles. Next, mix the ricotta, eggs and grated parm in a bowl with another 1/3 of the spinach, then spread this entire mixture on top of the 2nd layer of noodles. Add the remaining 1/3 of spinach on top of the ricotta mixture, followed by the chopped artichoke hearts, salt & peppa! Top this with the final layer of lasagna noodles, and press down gently. Pour, spread, smear the pasta sauce over these layers of yummy goodness, then cover the sauce with the shredded mozzarella. Voila! Now all you have to do is cover the pan with some foil sprayed with non-stick spray so it doesn’t stick to your cheese, and voila…

1 hour and 15 minutes at 325 degrees, then, take the foil off and broil for about 5 more minutes (keep an eye on it) to brown the cheesy top of your lasagna. Oh. My. Goodness.

Makes about 8-10 servings of gooey, spinach, artichoke and cheesy goodness!

There you have it – the LOVE LASAGNA!
